Weekday breakfasts demand three things of me from the Kid Cooks:
- simple and quick
- variety
- independence
In an effort to continue to meet their “demands”, I am always on the look out for ideas which is what inspired this simple fruity couscous recipe. The kids are appreciating the addition to the routine of oatmeal, cereal, grits, biscuits, and french toast that they often have.
Makes 1 serving
Need:
Microwave safe bowl (cereal size bowl)
Measuring spoons and cups
Microwave cover or plastic wrap
Get:
- ½ cup couscous (leave in measuring cup)
- In bowl put
- 2 Tablespoons raisins
- 2 Tablespoons craisins
- ⅛ teaspoon cinnamon
- ⅛ teaspoon salt
- 2 teaspoons brown sugar
- 1 Tablespoon butter
- ¾ cup water
Reminder: Do not put couscous in microwave |
Cook:
- Cover bowl of water, fruit, and spices with cover or plastic wrap.
- Microwave 3 minutes (full power).
- Remove from microwave.
- Stir couscous into hot mixture.
- Let sit for 5 minutes.
- Stir and eat.
