Baked Chicken Fingers

This recipe was born after my sons looked through my cookbooks and said “we want to make fried chicken”. So, I kept the comment “that’s why you buy fried chicken in a restaurant” to myself, and helped them learn to make their own baked version that was faster, cleaner… and safer! They have done the recipe several times and are doing well with it.

There is always a safety concern with raw chicken, but, as long as they follow directions and are patient, this goes well. Also this recipe is a little longer because of the steps and need to be clear in making the chicken. It really isn’t complicated.

Baked Chicken Fingers                                                                Makes 3 servings


3 medium bowls

Fork and Spatula

Cooking Spray

Rimmed baking sheet


  • Chicken breast tenders, about 9 tenders, about 1.25 pounds (20 ounces)
  • In one medium bowl, put
    • ¼ cup flour
    • ½ teaspoon salt
    • ½ teaspoon pepper
  • In another medium bowl, put
    • ½ cup plain bread crumbs
    • ¼ cup grated Parmesan cheese
    • ½ teaspoon Italian seasoning
  • In third medium bowl, put
    • One cracked egg
    • 1 Tablespoon water


  • Use fork to mix flour mixture
  • Use fork to mix bread crumb mixture
  • Use fork to break up egg and mix with water


  1. Preheat oven to 425°
  2. Lightly spray rimmed pan with cooking spray
  3. Open chicken tenders
  4. Place materials on counter in this order: 1. Tenders 2. Flour – 3. Egg – 4. Bread Crumb – 5. Pan

Be careful, DO NOT TOUCH other things with raw chicken on your hands.

  1. With one chicken piece at a time,
    1. Roll completely in flour
    2. Dip completely into egg
    3. Coat with crumb mixture
    4. Place on baking sheet
    5. Repeat for next piece
    1. Scrape out bowls including egg into trash.
    2. Put dishes to side to be washed.
    4. Clean counter.
  2. Bake chicken for 10 minutes.
  3. Carefully turn chicken over with spatula
  4. Cook another 10 minutes.
  5. Remove from oven. Turn oven off.
  6. Let chicken rest 5 minutes.
  7. Serve
